Cavas Recaredo started production in 1924 resulting from the work of Josep Mata Capellades, a Cava “bottle disgorger” by profession. Nowadays, with the third generation at the helm, they constitute a benchmark in the world of Cava, excelling due to the superlative quality of all their products and for the commitment undertaken over their style, using only grapes from their own estate, utilising solely cork stoppers in the ageing of their Cavas and creating crystal-clear products, without liqueur d’expedition, which inspire a lot of respect and receive acclaim in reviews worldwide.

Appearance

A straw-yellow colour, very pale, with a measured mousse of very fine bubbles.

Nose

It needs time to breathe but releases delicate aromas of ripe yellow fruit, with floral hints that give way to a more complex aromatic array, the result of long ageing on its lees. Cocoa, toffee, a trace of coffee. Very open and elegant with a pronounced varietal character.

Palate

Surprisingly elegant, very tasty, with a dry palate and a likeable, well-integrated carbonic touch. The finish continues fresh, and is very long, flavoursome and mineral. Mediterranean hints.

Remarks

Undoubtedly, the Recaredo family’s top Cava. A Cava of the terroir, of the region, with great personality that comes from the small hill known as “de’n Mota” where one vineyard of just a single hectare, planted as bush vines with Xarello in 1940, shows us the house style in its purest form. Of this magnificent Turo d’en Mota 2002 only 2,704 numbered bottles were produced which have stayed in the cellar for over a hundred months before being released for sale. It is such a flavourful wine that it is difficult to come up with dishes that can support it, but white meats, white fish with firm meat and any type of raw and cooked shellfish are some options to highlight. Fantastic with sliced raw Yellowtail, yuzu and cashew slivers.
